Suzy’s Super Dip
1 tblps olive oil
2 red peppers chopped
1 poblano pepper chopped
1 Anaheim green pepper chopped
3 garlic cloves chopped
1 1/2 pound ground turkey (or beef)
1/2 t pepper
1/2 t salt
1/2 t chipotle chili powder
1/4 t cayenne pepper
3 t garlic powder
1/2 t onion powder
4 tblsp ground cumin
1/4 tsp turmeric
1 can of organic unsalted black beans
1 can of petite diced unsalted tomatoes
1 can of Rotel unsalted diced
In a large skillet heat oil, add chopped peppers, onions and garlic. Sauté till your desired firmness. Add ground meat, sprinkle with seasonings, brown, than drain. Add black beans, petite diced tomatoes, Rotel tomatoes and green chilis. Cover and simmer for 15 to 20 minutes. Taste and add more salt or pepper to your liking.
Suzy uses organic ingredients and unsalted canned items. This allows guests to add more salt and meets the needs of guests who are limiting their salt intake.
The dip can be also used as a taco filling, topping for fry bread for Indian Tacos, or topping for nachos or a burrito bowl. For a healthy nacho...thinly slice a sweet potato, toss in olive oil with garlic powder and pepper, bake slices at 425° F till desired crispness than top and layer with cheese for nachos
Place dip out for guests with small bowls (large group keep warm in crock pot) along with additional toppings such as jalapeños, lettuce, salsa, low fat Mexican cheese blend, sour cream, sliced ripe olives, chopped avocados or guacamole, and Tostitos multigrain scoops or your favorite dipping chip or let them pile high and eat with a fork.
The dip freezes well. Divide into storage bags and freeze. For a quick snack take out and microwave till warm and serve.
