Suzy’s Homemade Noodles just like Grandma’s
1 cup flour to one egg
1/2 tsp salt
Make a well in the middle of the flour. Crack egg/eggs into the well. Mix together so the dough comes clean from the side of the bowl. If dough is crumbly add another egg or just a egg yolk. If too wet and sticky add more flour. Suzy started with 3 cups flour , 1 1/2 tsp salt, and 3 eggs than added three egg yolks to get the correct consistency of the dough. Knead dough into some whole wheat flour than cut and divide, roll out and cut into noodles or if you have a pasta attachment for your Kitchen Aid than divide dough feed into attachment at 1 the widest attachment than 3 than 5 for the a thicker noodle use 3 as final setting. For the slurpiest noodles keep them long or you can cut in half after feeding through at 1. Remove the wide attachment (make sure the mixer is not running) and put the fettuccine noodle attachment on. Guide noodles through drop immediately into boiling soup or water. Cook till desired, about 2 minutes. Enjoy!
